Rainbow Cookies

In honor of R-week, we made Rainbow cookies. He enjoyed making the cookies (using the power machinery, um, kitchen aid mixer.) But wasn't too interested in the shaping of the cookies. I thought he would totally dig it because it was a bit like playing with playdough. Wrong again. Oh well, they tasted good.

When it came time to color the dough, it was a good review for primary colors (which I'm proud to say he was able to articulate!) I asked him about the combinations, "what does red + yellow make?" and he could tell me those, too!

We used a simple sugar cookie recipe:
1 cup sugar
1 cup butter, softened
2 cups flour
1 tsp. vanilla
1 egg

Mix sugar, butter, egg and vanilla. Add flour and mix well. Divide dough into six balls. Add a different food coloring to each ball.

Roll into a snake shape. Arch snake shape and press onto cookie sheet. Add other snake shapes until the rainbow is formed. (OR! Form a letter R shape with them.)

Bake at 350 degrees for 6-8 minutes.

I've found that when it comes to baking cookies, parchment paper is my best friend.
Update: Here's another version of Rainbow Cookies (thanks Crafty Crow). Wish I'd seen them yesterday.
