Deceptive Black Bean Soup

While it still not cool enough outside for soup (it's 103*), I made a huge pot of black bean soup yesterday.  It's not from Deceptively Delicious but it could be.  Mr. Intensity even ate it.  I think it was because he manned the power tool immersion blender.  He enjoyed it so much that the motor got hot and stopped working until it cooled.

Here's the rough recipe.  It a bit different every time I make it.

2 bags of black beans (soaked overnight)
6 cups chicken broth
6 cups or less water 
6 garlic cloves, minced
2 onions, chopped
3 carrots, chopped
3 peppers - red, green, yellow
4 celery stalks
2 jalapenos, seeded, veined & diced
can of tomatoes
2 T chili powder
2 t cumin
2-5 T taco seasoning
1 t black pepper
1 t salt

boiled/simmered beans in broth/water for 1 hr on stovetop then added the rest as I chopped it...simmered for another 2 hrs.  When everything is mushy, blend.  Taste to adjust seasonings. Serve with dollops of sour cream.


You can 1/2 the recipe.  I purposely made a lot, knowing I would freeze most of it.
